Mojo De Ajo Preparation:
This is easy to make Garlic Oil and Pieces for use in other dishes. For instance with mushrooms or fish, shrimp and pasta, stuffed Pork LoinChops, There will be Oil for frying/sauteeing, oil for salads, sauces, Chunks of infused garlic for addition to meat, possibly used in lightly fried vegetables.... Use instead of raw garlic in soups...
4 heads Fresh Garlic
2 Cups Fruity Olive Oil
1 table spoon salt
2 large limes
1 tspoon of Crushed Red Pepper or similar accent spice
Medium size Glass Baking Pan, Lime Squeezer, Potatoe Masher
> Clean all the cloves of the garlic, leave the cloves whole
> Put into the bottom of a glass baking pan and sprinkle a light tablespoon of salt
> Put in 2 cups of olive oil
> bake for 45 mins at 325
> take out and squeeze 2 limes and sprinkle a couple of pinches of crushed red pepper, or chopped chilis or ???
> bake for 20-25 mins at 325
> Crush the Garlic cloves in the pan with a potatoe masher
> Let cool and put in a sealed Jar and into the fridge - this will last for 2-3 weeks in the fridge - if you let it.
